Hi Brendan.I don't have much experience doing what
you are trying,but i remember seeing some pictures 
taken during a test run,of a freinds wedding last fall.
He took our friends out to several areas in 'old Markham'
and used settings in a park,under an old maple shade tree
with some of the 1800's architecture in the back ground.These
were used to pick the final areas to have the wedding party
shot at and they looked quite nice.It was a sunny day but
he used the trees to make a nice soft setting,as Shel and
others have mentioned.
