Random observations:

You need more memory and a faster CPU. With ATA100 IDE drives, I wouldn't
bother with SCSI HDs. I would get a SCSI interface card for the scanner.
Grain and sharpening: Go into channels and only do sharpening on the green
channel, where most of the detail info is. You might do a little blur on the
Blue channel to get the grain out of open sky. I also set the Threshold (in
USM) to 8, or more with grainy film; this helps to sharpen edges and not noise.
It'm much more important to have the scanner on a solid base than the printer.
Try throwing a bean bag on top of the scanner and see if it makes a difference.
