Andy,

I also own the MZ-S.  It seems to me, that when you are that
particular and methodical about focus, that you shouldn't even have AF
turned on.  My general rule of thumb is, Use AF when MF won't work as
well.  This case, MF seems like it would work much better.

As to technique, I tend to use the DOF more zoom like.  Pick my
subject and focus point.  Then depress DOF and turn the aperture ring
until I see the desired DOF.  Finish my metering and fire the shutter.
