Hey Larry, I'm not terribly up on the Mac Mini, but it appears to me that you CAN put one monitor on the HDMI and the other on the Thunderbolt port (as Paul has on his MacBook Pro). However, the HDMI port will support only up to 1920-by-1200 resolution. The Thunderbolt port will support up to 2560-by-1600 resolution, assuming your adapter does also. Some appear to "get in the way" and not communicate the monitor's resolutions properly.

However, your monitor specs suggest that Dual Link DVI is one of the inputs that your monitor will accept. To try that, you have to spring for a $95 adapter. Problem is that many times those "good deals" are a manufacturer's way of clearing inventory on a problem item while they quietly ship Version 2 (or a new item number) to the stores that fixes the previous problem.
