Just a SWAG, but the settings appear to show those that were in effect at the time the image was taken, and are those applied to that image. According to the manual (page 222) you set "Image finishing tone" and "Custom image parameters" before shooting. It doesn't look like you can change them in camera for an already existing image.
I don't think it would actually affect the RAW image, just the in camera processing. I don't know if there's something in the bundled Pentax Digital Camera Utility software that would allow you to adjust those parameters in post processing. Unfortunately, there's no separate user's manual to consult.
