With the Epson software I just try to get close, primarily with the levels and color balance adjustment. I scan at 4800 for the most part with unsharp mask turned off, then fine tune and sharpen as necessary in Photoshop. I scanned a bunch of 40 year old bw negs and transparencies for "Elapsed Times" mag, and they looked great in print.
I've been scanning some negatives with the epson software. While the images it produces are pretty good, to call the user interface a steaming pile of clunky, poorly implemented buzzard feces would be giving it far higher praise than it is worth. At every step of the way, it will just hang, until I twiddle the track pad. The settings will reset between every scan.
