There's a company here in NZ called Kaitaia Fire who make a habanero &
kiwifruit sauce. I don't think I've managed to try it yet. I quite like the
habanero flavour but have gone off the hot stuff these days. I'm certainly not
going near the Bhut Jolokia :)

I actually grow jalapeño chillies, just a few plants in pots, and I throw the
chillies (whole) into the freezer. I grow them myself because the supermarkets
are useless. I've grown several varieties in the past but I just stick to the
jalapeño now. Sadly the winters here are too cold so I have to start from
seeds again each spring.

A few years ago I made some jars of relish, based on an old tomato relish
recipe but with home-grown chillies substituted for some of the tomatoes. The
jalapeño version is my favourite but I also like the thai-super version (I have
to be careful licking the spoon of that stuff). It's amazing with corned beef
or on cheese & crackers.

We used to have an Indian restaurant here which offered mild, medium, hot,
Indian hot then English hot. Sadly they'd increase the heat by adding more of
the whole spice mix. When I tried English hot I was fine with the heat but the
sheer concentration of the spices wasn't agreeing with me. I almost finished
it but it was a Friday lunch so I decided I'd best play it safe and not need to
go home early :)

Cheers,
Dave
