That is what I do. Even so, I was having a very difficult time getting the red and orange cars to "pop" the way they do in real life. It may be that with the tungsten light, the sensor was being fooled and making everything more red, so bringing everything else down brought the cars color down. I don't know.

I was experimenting with bracketing ISO (it seems to be better off just
underexposing a couple stops in a lower ISO and retaining highlights),
and just getting to know the gear.  I need to be a lot more sensitive to
the focus point, I lost several shots because "it looked fine in the
viewfinder" but didn't look so good on the display.

The lighting at Canepa is very challenging, hard tungsten lights, mixed
with very blue light from the windows.  I had a deuce of a time trying
to get red and orange cars to come out right.

Carry a pocket gray card or one of those pocket Macbeth color checkers.
