Mike, the modern Israel uses modern Hebrew, not Yiddish. Yiddish is spoken in some communities, but it is mostly replaced by Hebrew.
As Larry said, Hag (H pronounced as "kh" in khaki) Sameach (ch pronounced the same way) means "Happy Holiday".
