Glad to hear about the kitchen.

If it's type 2 diabetes you may be able to do something about it.

Here's the science:

Here's a popularised version:

Still probably features more zucchini than any human really wants to eat, but you have to make some sacrifices. I found it when I was looking for ways to eliminate extrinsic sugar from my diet to help get on top of gout.

What's worked for me is to stop eating white food. Anything made with enriched white flour is poison, as is white rice.
Apples are fine, as are the occasional orange, but fruit juice is bad news.
Getting my BMI down to under 25 would be nice, but so far that hasn't happened, so I am still on the pills. If one is a sloth, get active. My diabetes came on after a couple of years flying a desk. I'm back in a construction related job that keeps me very active, and that really seems to help.

I haven't eaten white bread in 30+ years. I'm just getting older & I don't handle carbs & sugar as well as I did when I was younger.

They've got me on a restricted carb diet. That's what the cooking class is for. I'm supposed to keep carbs under 180 grams/day. Most days I can manage that.

I'm down about 20 pounds from 2 years ago. I figure I need to lose about 40 more. The problem is keeping the weight off after. I actually lost 30+ pounds, but gained a third of it back, so my strategy is 60 pounds loss, gaining only a third of that back again.
