I check my histogram after everyshot. Even when i did equestrian events i
would go back and check if i took 3-4 shots in a row. I would adjust if
needed. My K-5 is the best Pentax camera i have had for metering accuracy
but it still has tropuble, like you, with flowers in the red channel.

I get around that by shooting orange flowers
