It's actually quite easy to get it up and running.
There is documentation at:

Since you appear to not be using it yet, you might also want to look at
http://www.postfix.org/

From rom my experience of having used postfix for a few years then working
in an environment that had only sendmail, it wasn't something that I
enjoyed working with. Postfix is by far an easier system to dive into
and make configure. The configuration files are well documented
(typically) and depending on your distro it could be as simple as an
install of the postfix package..then install imap or pop (depending on
your needs)..then configure for your hostname and such.

Good luck and feel free to ask more questions as you dive into the
project more.
