You are right that a great many Africans play for European teams.  But
many of these seemingly African were either born in Europe or went there
early on.  Those Africans who play for foreign clubs but hold citizenship
of their home countries play for their national teams, if they get
selected in such tournaments as the World Cup.

The second question is unclear.  One should not also ignore the fact that
foreign coaches are involved coaching other foreign teams.  For example,
Brazilian coach for Portugal, Swedish coach for England, and so on.
Angola had a white Portuguese and a Brazilian player.  But it is the
French team that seems to be the most mixed, while Portugal, Spain, and
Germany not so.
