I think the only practical difference is one of cost. Aluminum is easy to
manipulate, cut, etc., and will likely be less expensive than stainless
steel. If there is an appreciable difference I would like to know. What does
your supplier say? It is not a good idea to come up with RFQ requirements
until you have asked some suppliers for their input.

I would suggest you concentrate on performance guarantees, and work with a
supplier that understands your specific demands for efficiency, target
temperatures, leakage, reliability, etc.
