At the Philadelphia Museum of Art, we have an aluminum walk-in freezer.
The choice of material was partially based on its lighter weight and
ease to take apart and move to new locations. On the other hand, the
floor is now dented from the wheels of carts with heavy loads. There are
special mats available for freezer floors. These mats can help protect
the floor from distortions and help air circulation by keeping objects
slightly off the floor.

I think the only practical difference is one of cost. Aluminum is easy
to manipulate, cut, etc., and will likely be less expensive than
stainless steel. If there is an appreciable difference I would like to
know. What does your supplier say? It is not a good idea to come up with
RFQ requirements until you have asked some suppliers for their input.

I would suggest you concentrate on performance guarantees, and work with
a supplier that understands your specific demands for efficiency, target
temperatures, leakage, reliability, etc.
