Now sorted thanks, sorry to bother everyone. I missed a second switch in
the man pages, hence:
#ssh -D <local-port-number> -p <target-port-number> <ip-address>
now works (the switches are case sensitive !).

Do I perhaps have to specify the outgoing port on my box as well as
the target boxes port?
