Yes this should work, for anything "local" (ie everything on your Linux
box should now know where to find things). The advantage of using DNS is
that it can make the same information available to other boxes on your
network, as well as other functionality (eg MX records). For a
standalone desktop you won't need that.
/etc/hosts should be all you need. It is possible to set a box up which
doesn't use the hosts file, but I can't imagine any install would not
work fine like this out of the box.
NB: If you uses your hosts file for something which can be resolved via
DNS (eg you put www.google.com in there) then your hosts file will take
priority (assuming a default config).
