Hi, You can 2-way encrypt all of the data stored in the DB fields, but you would still have to separate the encryption keys from the physical server. You could run one MySQL only server and one Apache server in separate parts of the building. Then you can lock them in rack cages that are bolted to the floor in locked closets with fire doors that are unmarked.
You might also tell your client that is why people buy space in a data center. It removes the physical threats if you are in a good one.
