What i did not like , is the use of mysql instead of mariadb (since
oracle is very very unpredicted...)

you may replace the oracle version of mysql with any fork, eg. mariadb
or even percona's mysql.

So , as i am a new here , 3 question please ,

1. I would like to ask if there is any howto for installing Piler
with mariadb / postgresql on debian / freebsd  systems ?

http://www.mailpiler.org/en/installation.html describes what to install.
It even has a freebsd specific paragraph.

2. If there a way to define to archive only outbound / inbound / both ?

not sure, you should configure it on your MTA, I think

3. How do i backup the systems' there is any avail script or i need
to write one an my on ?

Backup 3 things:

- the piler database
- the sphinx file (/var/piler/sphinx)
- the stored emails (/var/piler/store)

+ the piler related configs, eg. piler.conf and piler.key
