The latest gnome-pilot has support for automatically doing a sync when
the Visor sync button is pressed in the USB cradle, no manual triggering
needed.

Someone else posted a small script that did this using devfs to the
usbvisor-unix mailing list a while ago.

And with the hotplug scripts, you should be able to do it if you don't
have devfs on your system.
