Sadly, there is no feature to reset the levels to the default:

So the only way to do it is to remove any superfluous keyframes (by
doubleclicking them) so that you end up with only two keyframes in your
clip (beginning and end), then slowly drag them up to the middle until
you see the label saying "100%"...

Not optimal, I guess.

Snapping, hey, that's not a bad idea! Or maybe it could "round to values
of 10" when you hold Shift down or something (otherwise it would be
difficult to make precise adjustments near 100% I guess).

being generally a bit weird and unreliable:

Maybe if you have some time on your hands and some skills, you could
whip up a patch for it? At least in theory, it doesn't seem incredibly
complex :)

Yes, panning curves would be a nice feature to have... but nobody
implemented it yet so I can only guess the audio automatically gets
converted to stereo at render time.
