Can you post more details about your network configuration (like your /etc/network/interfaces). Seems like ifplugd is used which is started after systemd has tried to mount the remote NFS shares. Fwiw, you get a more verbose boot log by adding systemd.log_level=debug to the kernel command line. I personally also prefer to omit "the -x" when running journalctl, to omit the catalog messages.
