One problem with using plex86 (or vmware) as a firewall:

The virtual firewall machine will have a virtual network interface also.
How are you going to plug a real wire into a virtual interface ;-). 

I guess a real firewall needs two real interfaces, one for the 'dirty'
side of the network (eg internet) and one for the 'clean' side.
