Use Classic Mode. Go into Preferences -> Library -> Category Style.
Its interface is more akin to the standard palm UI.

There are plenty of third party utilities for Windows (which I'm
assuming you're running) that allow you to do that. Both jpluck and
the python distillers support a command-line interface, in which case
you'd plug the one you're using into such program.
