Guided tours are a part of the Open eBook Publication Standard (OEBPS). Might be interesting to look for other things like them in that standard (at www.openebook.org). One way of composing them would be to instrument a browser with a Javascript bookmark that, when pressed, would add the current page to a list. At the end of a browsing session, you'd run a program which would turn that list of pages into a Plucker document with a guided tour.
