replacing postfix with sendmail is as easy as

rpm -e --nodeps sendmail
rpm -ivh postfix-YYYYMMDD-i386.rpm

edit the /etc/postifx/aliases

and run the command 'newaliases'

if you want more functionality, configuration settings, read the *-sample.cf in
/usr/doc/postfix-YYYYMMDD
