Go for hardware RAID, then. And while you're at it, buy *at least* one
more disk and go for RAID 5.

Defeats the purpose of having RAID, I think. If, as you said in point
2, you're going for RAID 1, the second disk will just mirror the first
one. LVM is almost always advisable over manual partitioning,
specially in enterprise environments.
