you may try using the tools on this site:
http://ltp.sourceforge.net/

you'll have an idea on how your server will
behave under such load. but nothing comes
close to the actual traffic, so better keep your
mail server logs in order for you to project the
load and consider it for future network planning.

on the other side, you can always post the
email addresses under your domain over the
internet and let those crawlers fetch it and
eventually, spam will follow (although it would
take a while before those v1agras reach your
servers). that way, you won't miss unwanted
traffic on your equation.
