I guess it depends the which forums you are subscribed
to, but I don't see any reason why Ubuntu is not
suitable for a server.  

It would most likely depend on what apps you're going
to use the server for.  Stuff like mail, dns/dhcp,
samba, LAMP, and such, Ubuntu is as suitable as most
popular distros out there.  It will boil down to where
you're confortable with.

If you're going to deploy a software like SAP or
Oracle 10g RDBMS, you should think twice about Ubuntu.
 I say this mainly because it is **not yet** a distro
that these software makers explicitly support.  This
is just a matter of time though as Ubuntu is gaining
popularity (law of supply and demand).  This applies
as well to others, like Gentoo.
