I have bombarded with spam. I check top and shift+m and there's a lot of perl 
and spam running process. I have check that we have one domain that accepts 
email even the address is not valid. Sad thing, client don't want me to have 
list of their emails included in our database so it accepts all.

Good thing we have another server with java as mta. It was running smoothly 
even it was bombarded with spam. It has also antispam designated for java also. 
I change their primary mx to this server and my mail server now has stable cpu 
load.

  first u can check with top, then SHIFT+p, if it's really ur smtp server 
that's eating up ur cpu. if u'r using postfix, top will show which part of 
postfix is eating it up.
   
  if it's queue manager, you can try setting-up a relay server then flush the 
queue to see if all mails will be dumped there. if u don't have a separate 
machine for relay, try deleting all mails in queue to see if it frees up cpu.  
queued mails can sometimes cause high cpu utilization.
   
  u can try using netstat to investigate a particular ip connecting to ur port 
25. something like 
   
  netstat -ant | grep EST | grep :25
   
  would do.
