You'll probably need at least two video cards. If your motherboard has a built-in VGA, you'll need a separate PCI[X] card for the other heads. Most PCI video cards I've seen comes with a DVI port, a VGA port, and an S-Video port. There are DVI-to-VGA converters out there. Go for nVidia cards. So far, they're the best supported video card in Linuxland, as per my experience.
