Possibly a video driver problem.  The boot kernel uses a different driver from 
X.  I do the same thing you did -- take out splash from grub's menu.lst.  I 
also remove usplash from the boot scripts being loaded.

However, that's one of my major complaint against the new Ubuntu releases... my 
old CRTs are going blank during the boot process. My workaround was to remove 
the "splash silent" at the kernel options so that I'll be able to see some form 
of feedback...
