To have minimal CPU usage in VirtualBox, you can use a lightweight window manager like openbox or awesome instead of Gnome or KDE. In this way, you can use linux for pure programming and Mac for desktop apps. I think virtual OSs still have some issues in dealing with low-priority background processes which are common in a full desktop environment like KDE and Gnome.
