When I had /usr/bin/claws-mail selected in the file browser window I clicked on Open. The file browser window closed and the mailto dropdown still said Evolution (default). I also tried double clicking on /usr/bin/claws-mail instead of using the Open button, but it still refuses to accept the binary. Well, at least it's good to know that it works for you.
