For what it's worth, I have been streaming and recording most presentations ( http://pdxlinux.org/live ) but it generally does not show the on-screen view very well. Which... might matter quite a bit for this one. As for Desktop-free... do consider how many people run all of their open source operating systems server-side and headless.
