I've done this in windo$e 98 although haven't tried 3 cards or in win2k. 
As usual, crashed more often than not :)

OTOH, just to say something in relation to linux, Mandrake 8 supports dual
head x installation outright during the installation process. haven't
tried RH7 though.

The only drawback I see with dualheads is that obviously, it would require
twice as much resources as single heads would . Just in my case, 2
1024x768's desktops with el cheapo s3 virges eats my CPU and memory for
breakfast.
