One approach will to install some Linux-based anti-virus package like
those by Kaspersky <http://www.kaspersky.com/>, NAI/McAfee
<http://www.nai.com/>, et al. With Kaspersky's anti-virus utility for mail
gateways and servers there is a daemon that interacts directly with
Sendmail, Postfix or Qmail. With "sweep" type anti-virus packages like
NAI's or Sophos's, you'll probably want to use AMaViS to get your MTA and
your anti-virus package working together nicely.
Alternatively you can use body checks to find specific patterns found in
most of the popular viruses.

Wow. You have one busy mail server! What MTA are you using? And you might
want to use something like MRTG to keep check of bandwidth utilization. :)
