Yes you can. I'm a stubborn Pine user (can't get myself to use mutt,
hahaha). Here are some basics you'll need/want:

inbox-path={localhost:143}INBOX
folder-collections=imap-mail {localhost:143}INBOX.[]
default-fcc={localhost:143}INBOX.Sent Mail
default-saved-msg-folder={localhost:143}INBOX.Read Mail
postponed-folder={localhost:143}INBOX.Drafts

$HOME/Maildir/{cur,new} is your INBOX. And every e-mail is a file under
{cur,new} depending on whether it's a fresh delivery of has been read.
That's the nature of the Maildir format.

I use authdaemon which in turn uses authpam. You can also use authpam
directly. Or authldap if you want. I use authpam + pam_ldap instead.
Haven't tried userdb though.
