If it's for incoming, just define multiple MX records for the domain.
For outgoing...hmmm...set the sendmail to queue the mail after loading reaches a threshold level (varies from cpu to cpu). Share the spool directory via nfs. Other linux servers to use this spool directory so that they can process sending mail as well. Or - you can define multiple smtp servers with unique IP address to your smtp servers. Automatically, the dns server will rotate through each ip address everytime it is queried, distributing the load automagically. Create a central alias database to forward emails to various servers.
