if u have an already running gentoo then u can recompile everyting if u want. u can emerge sync, bootstrap, emerge system, then maybe emerge world, and then emerge other things u want. emerge -C things u dont want. if u dont want the current partitioning then maybe that would be hard to do but still doable.
