I don't see any problems regarding moving from Fedora to Ubuntu except that you'll be using sudo through your local account since root is not at all used by default. I never had any issues moving from SuSE back then.
What about moving from Fedora to CentOS?
I just installed CentOS on two boxes. I was upgrading from Red Hat 9.0. Both were painful because of hardware glitches (blasted CDROM drives!. I also had to retain lots of user data on both boxes. In the end, the upgrades were successful and no important data was lost. I did lose a few files because I DIDN'T back them up. But that was deliberate.
There was also a video issue on one box. For some reason, 1024x768 mode wouldn't work. I fonally got it running after tweaking the Screen Resolution in EACH GUI! I had to do it for GNOME, KDE, and XFce. The system-config-display command dosn't cut it. I still had to adjust the screen resolution using each GUI's tools. Once that was done, the video worked. I also had to download the new NVIDIA driver for TNT2 Riva since the old NVIDIA driver package I had wasn't made for CentOS.
By the way, rootkit hunter (rkhunter) doesn't officially support CentOS so a few checks are skipped.
I recommend a clean install as there's no "upgrade". If your /home is in a separate partition, you're way ahead.
By the way, CentOS works great.
God bless!
