Reading the ARStechnica article to which Galen pointed taught me that the
phone I want is the Nokia 6.1. It is a GSM phone supported by "... AT&T,
T-Mobile, and a million AT&T and T-Mobile MVNOs, like Cricket, Straight
Talk, H2O Wireless, Ting, and a bunch of others." Verizon and Sprint don't
support it. (These two support only Motorola and Apple.) Since Verizon has
no particular loyalty to me, I've none for it. Cost is a big factor; I'm
now
paying $80 and change per month for two phones.
So, my question for all of you is to which carrier would you recommend I
switch? I assume that we can keep the same phone numbers with a new carrier
but I have no knowledge of any of them.

I am in no way in love with Verizon, but given the amount of time you
seem to spend in the sticks, I would be cautious of switching to another
carrier. ATT might be okay, but I suspect you might be disappointed
with T-Mobile's rural coverage.
FWIW, I have an unlocked Motorola G5+ which I use on Verizon. The G5+
supports both Verizon and GSM carriers. I'm not sure about Sprint.
Back in October I took a trip to Portugal. I bought a Portuguese
Vodafone sim card and installed it in my phone. I had no trouble using
it in Portugal, Spain, Germany, and the Netherlands. Europe cell phones
all use GSM.
Given your situation, you may want to consider one of the G7 phones
mentioned in the article. Alternatively, you might find a screaming
deal on the older G6 family.
The one thing I would definitely recommend is buying an unlocked phone,
preferably one that supports both GSM and CDMA. With an unlocked phone,
you aren't beholden to any carrier. I bought my phone directly from
Motorola(aka Lenovo), but you can get unlocked phones from many places,
including Amazon and Newegg.
