According to xrandr the only option is 640x480, and that is echoe3d by
all the GUI configuration utilities. A couple years ago I switched to
the nVidia driver because of problems with Nouveau.

This is just a WAG, but try removing and re-seating your video cable. Your computer queries the monitor to determine what resolutions it supports. If that query fails, then I could envision a scenario where the video driver defaults to a low resolution. As I said, though, it's just a guess. It's probably something else.
