Zoneminder uses ffmpeg, you can go in and change all sort of parameters, setup a zm system and use it to test ffmpeg, that is where I have learned a bit about ffmpeg.
You could run a ZM on an RPi 4 and feed it with an IP cam, then you can go in and play with the ffmpeg parameters and see the results.
