I see three general options for you depending on your level of paranoia.

1. Extreme - must have data on personal equipment.
Like you said, get a cheap VPS and relay mail encrypted to your home.
Lots to choose from.  I personally recommend Linode.  Not the
cheapest, but technically adept, many options, quick and easy.

2. Moderate - data must be in your control.
Since you planned on a VPS anyway, just move all your mail services to
a VPS.  A cheap VPS will do fine for a small mail server.  Also, most
VPS providers allow you to use full disk encryption, in your own way,
with your own keys.

3. Low - convenience trumps data control.
Get a third party mail provider.  Could cost a bit more than a VPS
depending on your users/needs. Google Apps is no longer free.

d. Office365 $5/mo/user - Terrible, inflexibile web interface.
Supports most mail/collaboration standards. Though might be
interesting if you want MS Office licenses too.
