I don't know much about Linux apps, but Winamp should be able to handle
it - there are plugins for taking input from line-in (and, I imagine,
the windows mixer). The Winamp vis screens are some of the most
interesting around. I can also recommend G-Force
(http://www.soundspectrum.com/g-force/) which is excellent and will
take data from pretty much any source (costs money though). When I was
at school many years ago we all played around with a crazy little app
called Cthugha which I see is still in existence
(http://www.afn.org/~cthugha/) and is available on Linux. Give it a go
(I haven't tried in in nearly 10 years).
