Here's my custom-convert.conf file I've been using with my Sonos/LMS
system (switch out the xx:xx:xx:xx:xx:xx part with the MAC address of
your Sonos unit)

This successfully downsamples any of my hi-res files to the
Sonos-reported maximum (48kHz) and the -b 16 switch truncates it to 16
bit. I've used this with numerous 24/96 and 24/192 files and it's worked
faultlessly.

I can't really remember the inner workings of this now, because I
haven't had to change it in the last year, and it retains the FLAC
format rather than PCM, but it might give you a starting point because I
had no chipmunk effect and everything was successfully downsampled to
48kHz.
