Do your files have artwork ? This bug is supposed to be fixed in the latest nightlies, but might be connected to what you are seeing ?

If the problem is Slimserver stopping, are you sure it is an Itunes problem and not the problem that a number of people have reported with their antivirus programs blocking the mysql file ? What does the Windows Event Viewer say ? What antivirus do you have installed ?
