I have a few reasons for not using UNC paths -- there are a few other pieces to my solution (and workflow) that don't play as nicely with UNC paths. But you're right, it's possible under most circumstances. in the past, I've found it useful to not be tied to machine names -- mapped drives can remain a constant no matter where the music lives. Am not sure about the comment regarding the worth of running another process on the server... Generally there are dozens of processes running all the time on a Windows machine and in this case, the added process isn't heavy in terms of resources (RAM, CPU etc.). In my case anyway, spousal approval went way up now that everything can be done within Media Center and I must admit I find it extra easy this way too but of course everyone else's mileage may vary.
