slimfx isn't a plugin, so it doesn't go under Plugins. It's a skin, and should go under the HTML directory. I don't know the file locations under OSX, but try one level below the folder that holds the SC program file. If you see folders for other skins like Fishbone, Nokia770, handheld, etc. then you've found the right place.
